Setting up and Removing Tables

I am hosting a Texas Hold'em party and was looking for advice on how to set up tables.

I am starting with 3 tables of 8. I was wondering at what point you drop a table or what is the best way to decide where people go. What happens if on table has 3 people left but the other still have 8.

I've only just started playing and have never played with more than one table. Help!!!

there is also some software out there called Tournament Director. I dont know anythign about it but lots of people seem to use it for MTTs.
