The percentage is based on all the possible card combinations to follow and what pot equity each remaining player has should that combination fall. Run in its normal mode, PokerStove iterates through all possible card combinations, something that humans would have trouble with.

You can come close to the same numbers by computing the outs.

Consider that Player A has :As: :Ac:
and Player B has :Td:

and the board is:



Any of the 4 6's and any of the 4 Jacks would give Player B the winning hand. He is said to have 8 outs. In turn, we know 8 total cards, leaving 44 cards unknown. Thus he has an 8/44 chance of winning or 18%, while the AA has an 82%.

Edit: On TV, they also can take dead cards into account because they know some additional cards. Consider the above hand but the micro cameras caught a :Js: :Qd: hand that folded.

So, 1 of the Jacks is not available (leaving only 7 outs) and we know 10 cards instead of 8, leaving 42 cards unknown. So Player B would have a 7/42 chance of winning or 16.7%.
